This recipe for easy garlic roasted cabbage comes together in no time at all and requires only five ingredients, most of which you probably already have in your kitchen! Serve it with your favorite lean protein and a side of roasted sweet potatoes for a healthy and satisfying meal.

Easy Garlic Roasted Cabbage

I am a big fan of cabbage. An unnaturally big fan. As a young girl, the special dinner I would request on my birthday every year was corned beef and cabbage and a large part of that request had to do with the cabbage and not the corned beef. I mean what crazy 13 year old loves cabbage that much!?

Easy Roasted Cabbage

There’s something about the texture and flavor of the vegetable that calls to me and I love using it in everything from salads and soups to stir-frys and wraps. If there was one recipe I’d tell you to make from this blog that I’ve shared so far this year it would be this One Pot Chicken Cabbage Bowl with Sesame Ginger Broth. We’ve been making it regularly in our house ever since I shared it on the blog but I figured I should branch out a bit from this recipe and use my beloved cabbage in another way before we got sick of eating that dish over and over again.

And so here we are with this way-too-easy side dish!

Easy Garlic Roasted Cabbage Recipe

If you’re a cabbage fanatic like me, or if you are just a fan of easy recipes (also like me), I think this recipe might appeal to you, especially since it only requires five ingredients and the prep work is minimal.

Sliced Cabbage

Garlic takes center stage with this one and after brushing thick slices of fresh cabbage with a blend of garlic and olive oil, you simply place it in the oven and get on with prepping the rest of your dinner.

Description

This recipe for easy garlic roasted cabbage comes together in no time at all and requires only five ingredients, most of which you probably already have in your kitchen! Serve it with your favorite lean protein and a side of roasted sweet potatoes for a healthy and satisfying meal.


Ingredients

Scale
  • 1 head cabbage
  • 2 tablespoons olive oil
  • 5 garlic cloves, minced
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine olive oil and minced garlic in a small dish.
  3. Slice cabbage into circles and then slice in half, keeping the core in tact to hold the slices together. Place onto a baking sheet sprayed with cooking spray or lightly coated with olive oil.
  4. Brush cabbage with olive oil mixture, season with garlic salt and pepper and place into oven. Roast for approximately 35-40 minutes, until cabbage is tender and edges begin to slightly brown.

Simple Roasted Cabbage

I like to pair roasted cabbage with salmon or spicy chicken sausage and smashed potatoes or roasted sweet potatoes. Leftovers are also great topped with a runny egg!

    I roasted cabbage for the first time in forever last night, but I don’t think I left it in the oven long enough. Love your addition of garlic!

      I’ve done that before, too! Letting it in long enough to soften (without getting soggy) but also allowing the edges to get a little crispy is key!

    I love the way to chopped the cabbage…the older I get, the more I realize sometimes the simpler recipes are best. And healthy. And I’m from Buffalo, and if you don’t eat cabbage in Buffalo like the fat kid in dodge ball….you’re out!!! It’s a mandatory thing!

    My husband loves making roasted cabbage – so easy and healthy! It’d also delicious with a drizzle of peanut sauce or sesame oil when it comes out of the oven.

    Saving this to try! I’ve only tried to make cabbage once and it did not go well because I had no idea what to do with it. My dog loved it though. She actually stole pieces off the cutting board-little weirdo dog.

    I have never been a fan of cabbage but maybe I will like it roasted. I don’t really care for asparagus either but when it is roasted with olive oil and garlic, I am a fan. Maybe this will be the same. Something about roasting with garlic transforms veggies!

    I’ve never thought of putting GARLIC on the cabbage! Great idea, thanks for the inspiration! Grilling cabbage is always a winner in our family. Just put a chunk of garlic in tin foil with a drizzle of salt and oil and it turns out so soft and sweet! Absolutely delicious, summer favorite!

    I’m with you, I LOVE cabbage. When my mom would make roast when I was growing up, the cabbage she made with it was always my favorite part! I’ve never thought of roasting it like this! Now I know what I’ll be making tonight! Thanks!

    It’s funny, my mother used to serve cabbage when I was a kid & i hated it. I had a delicious side of braised red cabbage with pine nuts the other day & had to replicate it for the next 2 nights because it was so good! Can’t wait to give this a try. The crispy edges are already my favorite part, just like when roasting brussels sprouts.

    I love cabbage as well, and eat it picked in oil&vinegar cole slaw all the time, but never thought to roast it myself even though I enjoy it that way dining out. This is a must try!

    I, too, love cabbage! My mother ate it a lot while she was expecting me. Unfortunately, my dad can’t stand the smell or taste of it and we had it very rarely growing up. When he was away on business, my mom would boil a big head of cabbage (with peppercorns and garlic), cut it up, and put butter and apple cider vinegar on it. Soo good! Now that I’m married and out of the house, I like to make cabbage fairly regularly (or its cousin, brussels sprouts). This recipe looks great. Thanks!

    Cabbage is usually so cheap that I always want to buy it, but only ever made haluski with it before. Since that’s mainly noodles and butter, it’s more of a special treat. I’m definitely looking forward to trying this as a healthier alternative!

    This looks delicious. We LOVE roasted veggies at our house. I have always heard that cabbage is a major gas producer in babies though so I’ve steered clear. Have you noticed anything with Chase?

    Yummy!! I like you have a unhealthy love for cabbage! I make your Chicken cabbage broth bowl on almost a weekly basis because it’s so yummy, easy, and make lots for leftovers.

    We can’t get enough of roasted cabbage in our house! I just shred it in a big pile. Yours is much prettier. If you are ever short on time (or feeling lazy), using garlic salt and powder in lieu of mincing garlic is an ok substitute!

    I forgot to comment and tell you that I made the one-pot cabbage bowl from the recipe you posted. It was AMAZING!! It was a huge hit and I never even thought I liked cabbage. It was super simple and is deff one of my most favorite dishes now. Thank you!!

    Oh, this looks amazing!! Will definitely make this. I love cabbage!
    I actually made a version of the ginger broth dish you posted – I didn’t have cabbage on hand, and just used other veg and added more spices, but it was so good and also so easy! Bonus point: the boyfriend loved it
