Strawberry Lemonade Popsicles (Dairy-Free)

Temperatures crept into the low 80s in Charlotte every single day this week. I think it’s safe to say summer is right around the corner and you know what that means…popsicle season! Here is a recipe for dairy-free strawberry lemonade popsicles that are healthy and delicious.

Strawberry Popsicles Recipe

As a kid, nothing screamed summer more than the upbeat chime of the ice cream truck and it’s hard not to associate warm temperatures with cold, creamy ice cream and popsicles.

Homemade Strawberry Lemonade Popsicle

Last summer, I purchased a popsicle mold and began dabbling in making my own popsicles at home. I was amazed at just how easy it is to make your own sweet treats and love the fact that when I make popsicles at home, I know everything that’s going in them and can play around with tons of different flavor combinations.

Some of our favorites from last summer:

  • Pineapple mint
  • Coconut banana
  • Strawberry mango
  • Banana chocolate chip

I’m hoping to get a little more creative this year and try my hand at some cocktail-inspired popsicles… But I suppose I’ll have to keep things booze-free around here until after our little one arrives. Since my mojito and strawberry champagne-flavored popsicles will have to wait, for the time being, my summertime beverage-inspired popsicle will be this delicious strawberry lemonade beauty!

Strawberry Lemonade Popsicles Recipe

These pretty pink popsicles are coming your way today thanks to a collaboration with Silk!

Earlier this week, I made half a dozen strawberry lemonade popsicles with fresh lemon juice, frozen strawberries, vanilla almond milk, a touch of maple syrup and Silk Dairy-Free Yogurt Alternative made with real fruit (and no artificial flavors or colors)! Only five simple ingredients. Not too shabby, right?!

Silk Strawberry Dairy-Free

These popsicles are refreshing, lightly sweet, dairy-free and oh-so-creamy thanks to Silk Dairy-Free and lots of blended strawberries. They come together quickly and after popping them in the freezer overnight, you’ll have a flavorful dessert on your hands, perfect for a hot spring or summer night!

Description

These popsicles are refreshing, lightly sweet, dairy-free and oh-so-creamy thanks to Silk Dairy-Free and lots of blended strawberries. They come together quickly and after popping them in the freezer overnight, you’ll have a flavorful dessert on your hands, perfect for a hot spring or summer night!


Ingredients

Scale
  • 2 cups frozen strawberries
  • 1/2 cup vanilla almond milk
  • Juice of 1 1/2 large lemons
  • 1 tablespoon maple syrup
  • 4 5.3-ounce cups strawberry Silk Dairy-Free Yogurt Alternative

Instructions

  1. Combine all ingredients in a high-powered blender and pour into popsicle molds.
  2. Place in the freezer overnight or until popsicles harden.
  3. To remove popsicles from molds, run under warm water to loosen.
  4. Remove from molds and enjoy!

    Those look great! My husband makes ice pops all the time in the summer. I always try to tell him to use yogurt instead of just juice… maybe showing him this will help sway him!

    These look delicious! My son is dairy-free so these would be perfect for him! We usually use the Silk yogurt in smoothies but the popsicles are a great idea!

    Yum! I have made my own before, and now that’s it’s been hitting the 80s this week on the East Coast (high 90 on Sunday?!) I think it may be time to break them out again. Definitely going to try this combination and the pineapple/mint. I made a really refreshing creamsicle smoothie last summer with orange juice and vanilla almond/coconut milk (and maybe a little banana?) and I think it would be great as popsicles.

    I just got back from Brazil and fresh juice is a huge thing there. My favorite combo was pineapple mint– it sounds like a brilliant idea for a popsicle! I’m going to give it a try!

    I need your honesty here — do the Popsicles come out of the molds easily?? I have bought a couple for my kiddos and i struggle getting the Popsicles out!!! THANK YOU!!!

      YES!!! Just run them under warm/hot water and after about 30 seconds they slip right out!

    I’ve made my own popsicles many times I just basically make a smoothie and pour them into the molds. My favorite was banana, strawberries and orange juice. Even my nieces (who were 4 at the time) loved them!
